How do I figure out the right size dining table for my room?

First you need to know the size of the room. A simple rule of thumb is that there should be three feet from the edge of the table to either a wall or piece of furniture like a sideboard or credenza. Why three feet? To give push back room for a person seated at the table or space to allow someone to pass behind someone seated at the dining table.
